Best sandwich ever is made with grilled pastrami, melted pepper jack cheese, on a toasted Portuguese sweet bread roll.

keep it air tight, zip lock back or something, and in the cheese drawer of your fridge... lasts for a long time that way.

You just asked what our favorite type of cheese was. Not what would go best on a sammich.
For sammich cheese, I say jalepeno pepper jack. Few slices of that, a ton of roast beef, a few eggs or something... bacon... grilled sourdough buns... winning sammich.
Don't forget the spicy mustard!

Roast beef is OK, but pastrami is way better.
BTW: Jalapeņo Pepper Jack is my favorite cheese, on a sandwich or not...
