Pistachio Apricot Bars
1 cup butter, softened 1 cup sugar 1 egg 1 tsp vanilla 2 1/2 cups flour 1/2 cup choped pistachios 1 jar (18 ounces) apricot preserves Additional chopped pistachios, optional In a small mixing bowl, cream the butter and the sugar. Beat in the egg and the vanilla. Gradually add the flour. Stir in the pistachios. Press into a greased 13 x 9 inch baking pan. Spread with the preserves. Bake at 350 F for 25-30 minutes or until the edges begin to brown. Cool on a wire rack. Cut into bars. Garnish with additional pistachios, if desired. Makes 2 1/2 dozen bars |
