WOOLWORTH VEGETABLE SOUP
1 soup bone with meat
1 1/2 c. diced celery
2 1/4 c. diced carrots
2 1/4 c. diced onions
2 c. diced potatoes
1 3/4 c. tomatoes
1/2 c. rice
Salt & pepper to taste
1 can beef broth
Cover soup bone with water; bring to a boil. Cook for 30 minutes.
Remove bone from kettle; cut off meat in small pieces and return meat
to kettle. Add vegetables and rice; season with salt and pepper. Cook
slowly until tender, stirring frequently. Ground beef may be added,
if desired.
This is the best vegetable soup I have ever made. The can of beef
broth is my addition to the original recipe. Makes 16 servings
