Apparently, I poofed myself yesterday. I typed this up and thought I hit Post New Topic, but it never showed up.

Anyway, my SIL brought a half-gallon of Blue Bell Lite Homemade Vanilla to our gathering yesterday {My wife's dad's 80th birthday}. I wondered out loud why anyone would buy "Lite" ice cream. Then I tasted it. Not bad!!! In fact, it was pretty good.

Who knew Blue Bell Lite was good???

We don't get Blue Bell ice cream in our area. But I accidently bought some Miracle Whip light the other day and it's GOOD! I actually like it better than regular. I don't have a container of regular to compare it to, but compared to regular mayo: MW 20 cal, 1.5 gram total fat. Reg Mayo: 90 cal, 10 gram total fat!!!!! The one problem....it has 135 mg sodium compared to mayo having 70 mg. sigh :huh:

I like Blue Bell lite, it is pretty good stuff......... of course their "full calorie" ice cream is wonderful but the lite has less guilt attached. B)

Have you ever tried the Kraft Hot and Spicy Mayo ? B) It is not real new but sort of new I think.
We have and it is really quite tasty. It is not actually terribly hot at all, it is just a super nice alternative to the normal mayonaise. You might give it a try. :)

I like QP or Kewpie Japanese mayo the best. It's very rich and tasty.

I like to make some scallop dynamite with it. First start by coarsely chopping Italian brown or crimini (baby bella) mushrooms. Nest place them in an oven proof dish (I prefer just to make a one-time use container out of aluminum foil. Put it in the oven and bake for about 10 minutes.
Next, coarsely chop some scallops and mix with an overly generous amount of QP mayo, a little soy sauce and Masago (smelt roe) if you have any. Drain the juice off the half cooked mushrooms top with the mayo/scallop mix and return to oven for another 10 minutes. Put under the broiler or a salamander (not the reptile) for a couple minutes to brown the top. If you are fancy, a torch works well for this, like a creme brulee torch.

Let it cool and chow down, yum. Great over a little steamed rice. :D

That really does sound tasty.
Gonna give it a try before long.
